Sparkling Shiraz is a truly unique Australian style which first became popular in the 1930s. We chose our oldest block of Shiraz at Werribee for our Sparkling Shiraz. Intensive work in the vineyard resulted in a small parcel of Shiraz with perfect balance and wonderful concentrated flavours.
Made in the methode traditionale. Fruit was handpicked and gently destemmed to an open fermenter. After pressing, the new wine was matured in old French oak 20 months to soften tannins and add complexity.
Deep red purple, with a very fine bead and dense red fine and persistent mousse.
Marachino cherries and dark plums leap up out of the glass with the bubbles. Dark clove spices and dried fig can also be seen with hints of yeast derived complexity.
Classic leather, spice and plum flavours. The finely structured palate is balanced and has excellent fruit sweetness. Time in barrel and bottle has seen the tannins become fine and in the background. Time on lees has added texture and interest. The finish is long and persistent as all great bubbly reds should be.
