Another low yielding year at our Werribee vineyard, with good sunshine hours allowing full maturity in our Fortified Shiraz grapes. Our 2016 'Farnacles' was selected from our oldest plantings here at Werribee, found on top of ancient deposits of fossilized barnacles (farnacles).
Pristine fruit was hand picked at an ideal 16.5 baume and fermented in open vats with occasional pigage. Fermentation was stopped at the optimal balance of natural grape sugars by the addition of grape spirit. The wine was matured for 12 months in old French barriques before racking, blending and bottling on 7 June, 2017.
Deep inky purple, crimson edge.
Complex, warm aromas of dried plum, Christmas cake, raisins, toffee and lanolin.
Sweet fruited front palate, fl avours of chocolate, plum and toffee. Sugar and alcohol are balanced and add texture and richness. The finish is long and sumptuous; comforting on a cold winter’s eve. This is another very good release of Fortified Shiraz, which will age gracefully for many years.
Cheese – good hard, blue or picante; dark chocolate; tiramisu; or on its own.
