Another low yielding year at our Werribee vineyard, with good sunshine hours allowing full maturity in our Fortified Shiraz grapes. Our 2016 'Farnacles' was selected from our oldest plantings here at Werribee, found on top of ancient deposits of fossilized barnacles (farnacles).
Pristine fruit was hand picked and sorted in the vineyard to ensure quality. In the winery fruit was destemmed without crushing and whole berries were transferred to a single open fermenter. The wine was fortified using aged grape spirit to arrest the fermentation and maintain natural sugars.
The wine was matured for 18 months in old French barriques before racking, blending and bottling in Spring 2017.
Deep, dark crimson with brick edge and brilliant clarity.
Christmas cake, dark chocolate and plum offer richness. More secondary characters of leather, spice and hints of oak cask are welcome savoury touches.
Medjool date, currant and cacao nib surge forth in lush but dry tannins. Sweetness is apparent but acidity and savoury depth mean that balance is always maintained. Primary fruit of plum and cassis still shine through as well as budding secondary characters which promise and exciting evolution to come.
