Harvest dates: 22nd February-19th April
Vineyards: Geelong 57%, Macedon Ranges 28%, Beechworth 8%, Cardinia Ranges 7%
Winemaking: All fruit was hand picked and transported to our winery at Werribee for gentle whole bunch pressing. Juice was transferred carefully to a mix of new (27%) and used French oak barriques and hogsheads. Fermentation proceeded at moderate temperatures (up to 24°C) using naturally occurring yeasts. After 10 months in oak, the wines were racked and blended before bottling on the 29th March 2007.
